Murphy, 21, spent her youth career with Chelsea and made her senior debut for the Women's Super League side in 2019 before, in 2021, taking in a loan spell with Birmingham City as a teenager.
The Republic of Ireland international has since spent time with North Carolina Tar Heels and Wake Forest Demon Deacons in the American college system, scoring 21 goals across 74 appearances in the States.
On signing for the club, Murphy said: "After returning from America, I had a few options but as soon as I was told Newcastle wanted to speak to me I was excited. I have heard a lot about how ambitious the club is, and when I spoke with Becky I just felt that this was the right place for me.
"The club's values match mine and the project is so exciting. Everyone here wants to play at the highest level and I said yes straightaway. I can't wait to get started."
Newcastle United Women head coach Becky Langley said: "Emily is an exciting forward player who has impressed Claire and myself for a number of years whilst at Chelsea, Birmingham and recently in the USA.
"She's very studious, ambitious and a talented young player. We are all looking forward to welcoming Emily to the Geordie family."
